Lasagna!

So today I made a semi special breakfast that included the leftover potato and mushroom patties from last night's dinner. Here's a picture:


Tofu Scramble loosely based on the recipe from Vegan Vittles (grated carrot, scallions*, tofu*, etc.), potato and mushroom patties, tomato slices*, steamed biodynamic asparagus, mango acai juice*, and ketchup to go with the patties. Yummy!

Rachel keeps bringing bananas home. :(
Today she brought at least 20 more home, and I fear the never ending supply of bananas has started.
I made two more banana breads today, and I stuck them in the freezer. Tomorrow I have to make more.

I also made lasagna today, and it turned out very good. I decided not to cook the lasagna noodles, letting them cook in the oven. After I made the lasagna this morning (to let it sit for a while and soak up some tomato sauce), I got scared thinking it wouldn't work, but it seemed to, so all is well. Here are pictures of dinner:

Salad made from butterhead lettuce*, cucumber*, the roasted peppers* and
eggplant*, and lemon-shoyu dressing.

Plated, with a mixture of sauteed scallions*, halved cherry and grape tomatoes*,
and baby spinach* and baby romaine lettuce*.

In case anyone was wondering what was in the lasagna, it had:
whole wheat spinach lasagna noodles, the tomato sauce I made the other day, mashed white beans (with minced parsley*, basil*, and thyme*), sauteed mushrooms, Mozzarella-Style Cheeze Sauce (from Ecological Cooking),
and Tasty Topping (also from Ecological Cooking).

The Daily Roundup Of Food Rachel Brought Home:
swiss chard, kale, collards, lots of strawberries, blueberries, raspberries, peaches, an apple, beets, bananas,
parsley, and leeks, grape tomatoes, lettuce, and baby spinach. (Just switching things up a little!)
