
Oatmeal pudding (I made this up, and I'm still working on the recipe, but when it's done I'll post it).

This picture's a little blurry, but it's banana bread with flaxseed meal. It was really good!

Apricot oatmeal bars.

Tomato sauce with onions, eggplant*, yellow and green peppers*, carrots, celery*, parsley*, portabello mushrooms*, yellow squash*, and garlic powder (because I ran out of garlic!).

My lunch: shredded lettuce*, dark kidney beans*, long grain brown rice, tomato*, red onion*, nutritional yeast, and lemon-shoyu dressing.

I also made some Gee Whiz Spread from The Ultimate Uncheese Cookbook, and some gazpacho for tomorrow's dinner. Oh, and I made a banana almond milk mixture that will be made into vice cream tommorrow.
That was my crazy day cooking.
