Herbed beans 'n' greens

For dinner today we had herbed beans 'n' greens over barley, baked beets (some of which Rachel brought home, some of which I bought), and a big salad made from shredded lettuce*, leftover steamed green beans*, grated carrot, cucumber* (well, I can't eat the cucumber, so I left that off my plate) and tomato*, nutritional yeast, and peppery house dressing. I liked the beans 'n' greens, but Rachel didn't (because of the dill in it).

I've been forgetting to do this, but here's The Daily Roundup Of Food Rachel Brought Home: 12 lbs. of bananas (this is not a joke). I froze some for smoothies, and we gave a few away to our neighbor, but I'm going to have to make banana bread. Besides the enormous amount of bananas, she brought home some swiss chard, collard greens, tomatoes, a small head of cauliflower, cucumbers, lettuce, a papaya, some peaches (yum!), a nectarine, and some fresh thyme.
On Mondays, her job (as assistant manager) is to go through the shelves and get rid of the expired foods, so naturally we get them! She brought home some taco filling (it's vegan), so I might make something with it soon.

Anyway, that's all.

I love the colour of beets - so vibrant and pretty! And I had baked beets today too! What a coincidence.

I'm not the biggest beets fan in the world... mostly because I have no idea how to prepare them! Do you eat them sweet or savory or both?

Freedom, that is a coincidence! I guess great food minds think alike. LOL.

Kleopatra, I find that when I roast beets, they're so sweet that I don't need to do anything with them, I just eat them plain. I do put chilled baked beets in my salads sometimes, and I really like them that way. To roast beets, preheat the oven to 400 degrees. Scrub the beets to remove any dirt, and place in a lightly oiled pan. Cover with aluminum foil, pop in the oven, and bake. It's hard to say when they'll be done, but small beets take about 30 min. and extremely large beets take about 1 1/2 hours.
