Our Spaghetti Meal

Tonight for dinner we had Food For Life Ezekial spaghetti tossed with sunflower seed avocado spread (from How It All Vegan) and chopped tomatoes. On the side we had shredded romaine lettuce* topped with sauteed Hungarian frying peppers*, onions, mushrooms*, and zucchini*. I also had tasty topping (a parmesan cheese substitute from Ecological Cooking) on the table, in case anyone wanted to add some. The spread was really good over the spaghetti!

On Sunday I opened a bottle of apple cider to use in the oatmeal bars, so I wanted to use it up before it became hard apple cider. :O
I made another batch of oatmeal bars, and whipped up a new recipe, Buckwheat Apple Muffins. The recipe is yummers and can be found on my recipe blog. I've also been enjoying apple cider mixed with plain unsweetened soymilk. It tastes like applesauce mixed with heavy cream, which is something I used to enjoy.



Buckwheat Apple Muffins. In case you're wondering why there's only eleven in the picture (as opposed to twelve), I had them by the kitchen sink and the muffin tin flipped over, causing one to fall into the soapy sink.

The Daily Roundup Of Food Rachel Brought Home: kale, collards, swiss chard, celery, parsley, cilantro, leafy lettuce, prepackaged romaine lettuce, mushrooms, zucchini, broccoli, tomatoes, cucumbers, strawberries, raspberries, and a perfectly fine watermelon that would have cost 8 dollars! I'm not sure why they were getting rid of the watermelon, but I am certainly not complaining.

I'm interested in those buckwheat muffins. I love buckwheat waffles. These seem like they'd be a nice, pretty wholesome breakfast muffin. Maybe if I get around to getting some buckwheat flour in bulk, I'll have to give it a try. And as someone else said, your pictures do look lovely!

P.S. I am envious of all this free produce you get! Maybe when I graduate college I'll look for a job at a healthfood store or co-op (with my English Writing Poetry degree. . . !) so I can hopefully supplant my grocery shopping :) It really is a shame how much stuff a lot of places throw out.
