Watermelon Gazpacho, Black Bean Hummus, and Tortilla Flats

I need to make this quick because it's thunderstorming right now so I have to turn the computer off soon, but for dinner tonight we had watermelon gazpacho (our favorite gazpacho in the whole wide world, this is from Vegetarian Planet), black bean hummus (from The Vegan Deli), and tortilla flats (from The Passionate Vegetarian).

I don't want to type the recipe for watermelon gazpacho out, because that would be copyright infringment, but the ingredients are: seedless watermelon, stale bread*, green pepper*, red pepper*, onion, garlic, cucumber*, parsley*, red wine vinegar, olive oil, salt, black pepper, and cayenne pepper.

The black bean hummus is so good! Have I mentioned we're hummus fiends?

The tortilla flats are made from whole wheat tortillas brushed with oil then sprinkled with a mixture of chili powder and salt. Sadly, I have never tasted these because they're too crispy for me to eat with my braces on. (Everybody else loves them.) Someday soon.....

My flamenco teacher's birthday was on Saturday, so as a present to her I made this meal and packaged it up for her. I hope she liked it. :)

Rachel went with some friends to see the The Squirrel Nut Zippers at a free concert, so she wasn't home for dinner and we ate all the black bean hummus up (keep in mind I gave some to my flamenco teacher and I also gave some to another friend), so now I have to make more tomorrow. Not that that's a problem now that me and my food processor are best buds.

Unfortunately I don't have any pictures, because it's been rainy all day, so I couldn't take any. If it's sunny tomorrow I'm going to take pictures of it all.

Black Bean hummus I have tried and enjoyed...what recipe did you use?

Squirrel Nut Zippers? I remember them! Sounds like a fun time!

I've always wondered this - what exactly is gazpacho? I always thought it had to have tomatoes. And, how do you pronounce it (hard to explain in writing but do you actually pronounce the -ch- sound like you would in 'cheese' or is it different?)

Watermelon gazpacho sounds incredibly exciting! I've been wanting to try some of these chilled fruit soups for years. And lately I've been finding them popping up in my online "research" (what a laughable euphemism for hours wasted web-surfing). Anyway, I like your blog. And am envious--I wish someone had homeschooled me when I was in high school; I think would have certainly saved me a lot of emotional trouble and insecurity :)

About 2 years ago I made a black bean hummus that was to die for! Do you think I can replicated it again...nope! The stars must have been aligned that day!
