I have a bad habit of making up a recipe to use up all the produce in the fridge.
Why is that bad, you may ask? Well, because I make enormous amounts of food at a time, and there's no way we can possibly eat all of it before it goes bad. Case in point: this Oriental vegetable salad.
I threw in some wilted baby bok choy*, steamed mushrooms, pea shoots*, snow peas*, baby turnips*, beets*, and carrots and dressed it with Oriental dressing, and it made enough to feed a small army. Oh well, what are you going to do?

I made some sweet treats for Susan to take up to her internship (her boss is lactose intolerant), but I can't post pictures because I'm saving them for when I post about the cookbook I used. I can tell you they were really yummy though.

Hi! Did you cook the baby bok choy that you used in your salad? I have never tried it raw...was it any good? I have some to use up in my fridge as I write this!

Hi Courtney! I actually steam-sauteed it slightly before adding it to the salad. It was yummy!
I do the same thing... and then I make leftovers out of my leftovers.. (usually a soup or in the summer a veggie burger.. it works well though!)
sometimes i just go crazy in the produce section and buy EVERYTHING (it's summer it all looks so great!)

I had the same 'clean out the fridge' technique! But, usually we have no problem eating in up after a couple of meals. Luckily my boyfriend has a big appetite.
I also am guilty of doing that same thing... clean out, make stuff! I usually give my food away ro my family when there's extras...
