Our Early Cinco De Mayo Feast

I have lots of news.

I didn't get a chance to post yesterday, so this is a two-in-one post. Yesterday I helped my flamenco teacher teach an afterschool program, and then Rachel had an eye appointment, and then we went to the movies to see
Neil Young: Heart Of Gold. Here's a story for you all.
The afterschool program started last week, but this week there were two new kids in it. Here's a conversation that I had with a girl (I'm paraphrasing it a little):
girl: Do you know why I'm taking this class?
me: No, why?
girl: Well, Shakira is my favorite singer and dancer, that's why I wanted to take this class.
me: Oh, well, flamenco is a little different than how Shakira dances.
girl: I know.

She's eight, by the way.

Here's another story:
Rachel had two bags of produce to bring home yesterday, so when we picked her up I got a chance to look through it. Yesterday she brought home: lettuce, summer squash, cucumber, parsley, celery, mini peppers, green peppers, red peppers, avocadoes, swiss chard, kale, maybe some collards? (I can't remember), mangoes, beets, rutabagas, leeks, and scallions.
My mom remembered my flamenco teacher saying that she wanted to buy organic peppers once but they were so expensive and she didn't want to spend so much money on them, so we decided to hunt her house down (I've only been there once, and mom has never been there) to give her some peppers. We got to the road that leads to her house, but I couldn't remember the address. We had to make a U-turn, and as we were heading back, we saw her car on the road. We passed her by and waved, and her expression was so priceless as she realized it was us! Anyway, we gave her some of the produce.

Today is my dad's birthday! Happy Birthday dad, I love you! (He's working out of town right now)

One of our friends has a staph infection.

Here are some pictures of tonight's dinner (a pre Cinco De Mayo feast) :


Salad made from lettuce*, red bell peppers*, green pepper tops*, and avocado*-salsa dressing.


A green bell pepper* stuffed with canned chili beans*, corn tortillas, and canned tomatoes with chilies. On the side is some steamed summer squash, and mango almond milk (unsweetened original almond milk blended with mango, maple sugar, and cinnamon.

If you look in the background of the first picture, you'll see a box and some bags. That's the stuff Rachel brought home today.

The Daily Roundup of Food Rachel Brought home:
parsley, a huge box of summer squash, swiss chard, kale, collards, bananas, a half pint of blueberries, some more avocadoes, cilantro, possibly some more stuff that I can't remember.

Ah Heart of Gold! I loved it. Neil really is such a old sap after all isn't he?

Jess, the avocado dressing was just 1 mashed avocado, 4 tbsp salsa, and some lemon juice (I didn't measure how much, just to taste). It was really good!
