Coconut-Vegetable Stew

All right, here's a picture of the Coconut-Vegetable Stew I made yesterday, consisting of coconut milk, portabello mushrooms*, red cabbage, yellow and orange bell peppers*, red onion, eggplant*, broccoli*, jalapeno peppers, ginger, garlic, lemongrass, canned baby corn, baby spinach*, plum tomatoes*, and cilantro*. It's pictured over basmati rice. I was planning on drizzling the top with lemongrass oil, but I opened the the oil and it smelled rancid. I just opened it today though, so I don't know.

lemongrass oil...hmmm...sounds wonderful. But if the smell is off, I wouldn't truest it either.

I also heart the canned baby corn! it's just so cute, like a puppy or a kitten!
