Yesterday's dinner theme was Italian; here's what we had:
Salad (made from lettuce Rachel brought home), grated carrots, steamed broccoli*, oven-roasted portabello mushrooms, grape tomatoes*, nutritional yeast, and Garlic and Herb Dressing from The Enchanted Broccoli Forest (using scallions Rachel brought home). This (the salad) was absolutely delicious!
Please don't mind all the tea on the left, a while ago Rachel brought home 5 huge boxes of tea (no, not tea boxes, we're talking moving boxes here). After we distributed them to all of our friends, we still have sooo much it's not even funny. It doesn't look like a lot, but we have all the unopened tea stashed in our pantry and just keep the open tea on the left.
Here we have calzones stuffed with Sicilian Style Swiss Chard (sauteed swiss chard with onions, garlic, raisins, sun-dried tomatoes, and olives.) I didn't use olives, though, because they didn't look quite right. :O The calzone dough was a simple pizza dough recipe, and I just used whole wheat flour for the whole thing instead of half white and half wheat. It was awesome! This was only my second time working with yeast, but I'm going to use it a lot more. It's so easy to work with! I'm going to be making bread soon.....
This is Parmesan-Style Eggplant from Vegan Planet. We had this last week, but Rachel brought home some more eggplant and I wanted to use it up, so we had it again. It was much better this time, because I cooked it covered, as opposed to last week's cooking uncovered. (The eggplant was a little chewy last time, but this time it cooked more while baking so it was meltingly tender. I' m getting excited thinking about eggplant parm subs. Now I just have to make submarine rolls. )If you look in the background of the picture, you'll see a ziploc bag, (I don't know what it's doing there), some dishes we just got at The Second Show ( a thrift store) waiting to be washed, the aforementioned olives waiting to be dumped (what are you gonna do, right?), some Mrs. Meyers lemon dishwashing liquid, and the countertop screaming to be cleaned (I made a mess, I'm sorry). Mrs. Meyers isn't my favorite brand of dishwashing liquid. In fact, I don't really like the smell of it. Has anybody else tried it? If so,what do they think? My favorite brand (so far) is Earth Friendly Products Ultra Dishmate Natural Almond dishwashing liquid. (If you haven't yet gathered that we don't have a dishwasher, we don't.)
Last but not least is our beloved Cauliflower Parmesan. Delicious as always.
No, you are not losing it, I didn't bother taking a new picture, so I just used the one from last week.
It's time for the Daily Roundup of Food Rachel Brought home (I would have posted yesterday night like I was trying to do, but blogger wasn't working again. What's up with that?) Okay, this is weird and I need help! I just wanted bold lettering for the word again, but now I don't know how to get back to normal lettering. Huh! Now I'm confused, but it's back to normal, so whatever. Anyhoo, here's what Rachel brought home yesterday:
Swiss chard, kale, collards , (it never ends), cherry tomatoes, regular tomatoes, parsley, I'm going into memory lapse mode and can't remember what else, so just use your imaginations. Hehe. :)
Now I have to go make applesauce, bake a cake for tomorrow (we're having our Easter meal tomorrow because my mom's working on Sunday), get together an order for Amazon (yay! I'm getting more cookbooks!), plan our Easter meal, and do other random things.
I think that's all for now. Today is Good Friday, so there's only one meal. We have leftovers, so I won't be posting a picture of our meal today. But come back either tomorrow night or on Sunday to see our Easter meal pics.

Everything looks awesome, especially the calzones! I want to place a cookbook order on Amazon... I'm addicted to buying cookbooks. It's a really bad habit. A fun one, though. :)

Yeah, I guess I'm addicted to cooking from cookbooks too. :) (Just so everyone knows, I normally don't cook this much in a day, but yesterday was set aside just to cook.)
